BOSTON: One-Night-Only Filipino Feast at Berklee College of Music’s B3 Restaurant

Team!!!! It was really awesome for us, along with Ms. Edwina Kleunder, to collaborate with Boston’s B3 Restaurant and Bar at Berklee College of Music, showcasing chef Jeffrey Salazar’s brand of Filipino cuisine— a rarity in the city! 🇵🇭🇵🇭🇵🇭

It was such an honor for us to have collaborated with the prestigious Berklee College of Music’s on-site restaurant B3 last September 18, 2018– our first sit down dinner event in the USA! B3 normally serves American South cuisine but for this special evening (US$65 per head), executive chef Jeffrey Salazar cooked up a spectrum of Filipino dishes—a tribute to his Philippine heritage—where guests are invited to feast together family-style. This is in line with our thrust at Cross Cultures to promote the exchange of cultures through food, in order to build a more global community.

Chef Jeffrey Salazar began his culinary career in Providence, Rhode Island and moved to New York City in 2013, working at a string of established restaurants including the Caribbean-inspired Cove Lounge in Harlem as Executive Chef as well as under Chef Bobby Flay at GATO Restaurant and Bar Americain. At B3, he spearheads a Southern-influenced menu that showcases the rich food culture of New England, where produce and fresh seafood are sourced from local farmers and fishermen. Embracing his Filipino heritage, Chef Salazar was inspired from a young age by his hardworking mother, originally from Navotas City, located north of Manila that is known as the fishing capital of the Philippines.

Guests were invited to feast together family-style on dishes like spicy sisig, shrimp ukoy, smoked ribs with adobo sauce and a particularly special novelty—jackfruit cornbread (traditional Southern cornbread injected with the popular Filipino fruit). The sold-out evening was accompanied by live music from Berklee College. Plus, the sold-out event had live music from the students of Berklee College of Music.

Jeffrey Salazar’s Ukoy (sweet potato and carrot fritters topped with shrimp), served with a beautiful chili vinegar (palm vinegar, soy sauce, minced garlic and red onions, black pepper, sugar, salt, spring onions and Thai chilis) (Photo by Cheryl Tiu)
Not your ordinary cornbread! This jackfruit cornbread represents everything B3 chef Jeffrey Salazar is. While the restaurant normally serves American South cuisine— for this special evening, he paid tribute to his Filipino roots, hence injecting the popular Filipino fruit also known as langka, to the staple Southern bread. The consensus? It was sooo good!

Adobo!! One of the most flavorful Filipino adobo dishes our founder Cheryl Tiu has had in the US. It’s Smoked Ribs (dry rubbed in spices, before being smoked for 6 hours, resulting in super tender, fall-off-the-bone meat), dressed in adobo sauce. It was the perfect balance of the flavor profiles of sour, salty and sweet. (Photo by Cheryl Tiu)

Special thanks to the OPM Pinoys Kelvin Gaisano, Jardine Gerodias and Jannah “Kix” Lu for all the support– and for introducing the class to Filipino food! Some had it for the first time tonight 🙂

Unfortunately since our event, B3 has since closed. However, Jeffrey is now heading the Duck & Chicken Group’s Parsnip restaurant (sister to B3 and Night Market) in Harvard Square, so stay tuned for what he has in store!
