MIAMI: Philippine Crab Roe (Taba Ng Talangka) At Yuzu Miami, St. Roch Market (June 2018)

Last June 2018, in honor of Philippine Independence Day, we celebrated by introducing Filipino cuisine to Miami, Florida with Yuzu Miami at St. Roch Market at the Design District. Yuzu, which just opened in February 2018, is a new Southeast Asian concept, helmed by chef-owner Andrew Zarzosa. Andrew is originally from Miami, but traveled extensively around Asia– he worked in  Indonesia (executive chef at Fairmont Jakarta), The Philippines (F&B Manager at Makati Shangri-La), Malaysia (executive sous chef at Shangri-La Rasa Ria Kota Kinabalu), and likewise the Bahamas, Dubai, and spent some time in Singapore. He was recently named by Forbes USA as one of Miami’s chefs-to-watch.

We served the Filipino delicacy taba ng talangka— or crab roe— (produced by no less than Asia’s Best Female Chef 2016 Margarita Fores) on fresh noodles, topped with gulf shrimp, shaved bonito and chicharron for US$16– and we sold out within days! We had to re-order stocks from Margarita herself for a second run.

It made our hearts melt that, even though not of Filipino descent, the Yuzu Miami team— led by the amazing Andrew Zarzosa– were cooking Filipino food with a lot of HEART for Miami. 🙏🙏🙏Thank you so much you guys for helping spread Filipino food culture to this part of the United States.
